Capocollo
An exquisite cured meat, sweet and soft, but which still retains an intense taste. It is made of the pork’s neck, with a strongly spiced and fragrant slating. It is wrapped in a natural gut and tied with a twine or with the more ancient method of reed listels, bearing full respect to the calabrian tradition. The long seasoning in the heart of sila altiplan, adds a truly unique taste to this kind of cured meat.
