Montenero, Montestella, Tuttofetta,
are our deboned hams line. With their authentic taste and ready to be cut, they will allow an easy and practical consumption. ‘prosciuttella’ is instead produced, following a traditional calabrian recipe, only with the inner part of the thigh, so to obtain a choice cured meat, a real heart of ham. San vincenzo is the only salami factory responsible for the production of such cured meats made exclusively of select thighs destined to protected denomination of origin, renowned for their high quality. The flavour of these hams is indeed unique and it is rooted in the south of italy: the salting, the accurate preparation, the spicing with calabrian aromas, and, last but not at least, the accurate seasoning in the crisp and cool air of sila altiplan, make out of these hams some true excellencies to be reckoned with.
The ham, soft and sweet with slight tones of spices, is perfect when accompained with unleavened bread or traditional breadsticks, but is also excellent with sweet fruits or vegetables such as, for example, melon or figs, which will temper the sapidity of the ham itself. Best served if cut with an suitable knife in thick slices.
